I love fall and  #EverythingPumpkin, For the next 5-6 weeks I’m going to be giving you some awesome pumpkin recipes, from cakes, to shakes, to a pumpkin latte’, and more.  I love fall here in Massachusetts, the leaves turning, and all the smells from the oven, of baking tasty treats, to roasting the turkey.

I have a great healthy pumpkin loaf recipe below compliments of Jill Coleman, I love this recipe. I have a few of my own pumpkin recipes I’m going to share with you, and a couple from another source that have awesome ones as well.

Healthy Pumpkin Loaf

This recipe is by Jill Coleman, www.jillfit.com I love this recipe I make it every Thanksgiving, I like to make it in a muffin pan, mini ones sometimes. Cook time would be very short then until tooth pick came to clean. I would have some after running the Feaster Five Thanksgiving race. A fun family race or a run or walk.

Preheat the oven to 325’ degrees F
Makes 12 servings

Mix the following in a large Bowl

3 Cups Almond Meal
1 Cup coconut Flour
2 rounded scoops of they protein powder (vanilla or unflavored works well )
1 tsp salt
1 tsp baking soda
1 and a 1/2 tsp baking powder
1-2 tsp cinnamon (to desired taste)
1/2 tsp nutmeg
1/2 cup granular xylitol ( or 1/4 cup of stevia powder )

Beat the following ingredients in a medium bowl:

12 oz (preferably organic) Pumpkin from a can ( I Use Farmers Market Brand organic pumpkin) not pumpkin pie filling
3 whole eggs
1/2 cup water
1 and a 1/2 tsp vanilla extract
Directions:

Add the wet mixture to the dry mixture and mix well with a spoon.

Pour the mixture into a greased loaf pan (5 x 9 inch) used coconut oil.

Bake for 55-60 min or until top is light brown and crispy

Immediately remove from the pan and let it cool completely on a rack, before serving
