I love these cookies, I have been making them since my kids were young, they loved them and now our grandchildren love them and can’t wait for Grandma’s christmas cookies. I have made them before at Easter and cut into easter bunny shapes, and eggs.
Makes about 2 dozen
Pre-Heat oven to 375’ degrees
- 1 1/4 Cups all Purpose flour
- 1/2 Cup of Sugar
- 1/4 Tsp Salt
- 1/2 Tsp Baking Powder
- 1 Tsp Almond Extract, I’m sure you could use Vanilla Extract
- 6 TBs Butter completely softened
- 1 Egg
Mix it altogether with your hand or spoon, I use my hand after I mix slightly with a spoon should be moist, I form a ball. Dough should form and roll into a ball.
Chill the dough at least 2 hours, I do overnight.
When ready to make, roll out the dough with a rolling pin on a floured bread board, and roll out to about a 1/4 “ thick.
I cut into different shapes, christmas trees, stars, bells, candy canes, snow flakes, etc…or you can roll out on floured counter or one of those mats that dough does not stick to, and I put some flour on top after rolled out so cookie cutters don’t stick to the dough.
I usually double or triple the recipe, to make them for my grandchildren, the dough will keep in the refrigerator for a few days. when you double the recipe the chilling time doubles, so I just chill over night.
You an also form into different shapes ropes, into a wreath shape too.
Bake for about 8-10 Minutes on an ungreased cookie sheet.
If you want them crunchier like sugar cookies let them get brown on the bottom, my kids like them barely brown on the bottom, so softer and tastes good that way with frosting, so I make mine barley brown on the bottom.
Funny my girl friend used to make them, but cooked them more and they did not like them.
I frost with Better Crockers Classic Vanilla frosting, these are there favorite cookies. You can just put colored sugar on them.
I did not try making them with a gluten free flour such as Bob’s red mill 1 to 1 flour that I used for the pumpkin recipes.
